So, it’s that time of year when the garden plot planted earlier in the spring begins to bring forth delicious food for the table!

Cream of Coconut Cake

INGREDIENTS:
2 sticks butter, at room temperature
   (1 cup)
1 1/2 cups sugar
2 tsp baking powder
1/2 tsp baking soda
4 large eggs
1 can (15 oz) cream of coconut
   (not coconut milk)
2 tsp vanilla extract
3 cups cake flour (not self-rising)
3/4 cup buttermilk
16 oz strawberries
3 cups (1 1/2 pints) heavy
   (whipping) cream
3 cups sweetened flaked coconut
non-stick spray

Flank Steak Pinwheels

Ingredients:
2/3 cup sun-dried tomatoes, (not packed in oil)
2 cups boiling water
1 pound flank steak, trimmed of fat
1 clove garlic, minced
3 tablespoons light herbed cheese spread, such as Boursin (see variation)
1 cup baby spinach
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground pepper

INGREDIENTS:
1 46-oz bottle tomato juice
¼ cup Worcestershire sauce
1½ oz lemon juice
2 tsp cracked pepper
1½ tsp celery salt
1½ tsp hot sauce
1 tsp horseradish
